Low Carb BBQ Chicken Pizza

yes folks…you can have Pizza and do low carb ! Of all the things I miss the is the one thing…that I truly can’t live without…
so my son and I set out to make our own low carb BBQ sauce.. and invent a bbq chicken pizza!!
It turned out so delishious..your going to love it!!!!!!!!
We used low carb tortillas for the crust…we love using these little many different ways…
they are a life safer when you are low carbing..
it’s not something we eat everyday..but they are a huge treat for us… so as you can see from the picures..these look sooo goood and they taste as good as it heres the recipe.. and give us some feed back on how you liked it..
Low Carb BBQ sauce
2 T. butter
2 whole cloves of garlic minced
1 C. Reduced sugar Ketchup
1/3 cup Splenda brown sugar
1 T apple cider vinegar
4 T liquid smoke
1/4 C chopped onion
3 T mustard powder
1 T. Onion Powder
place all ingredients into a saucepan and cook for 30-45 minutes until thick. Let cool and place in mason jar.
2 carbs per Tablespoons
TO make the low Carb BBQ Chicken Pizza
Take low carb tortilla
spread with 1 T low carb BBQ sauce
add spread mexican cheese..
top with shredded canned chicken
sprinkle with additional cheese and put under broiler until cheese is melted…
Our tortillas have 4 carbs in 2 for BBQ sauce..if you use more sauce be sure to up the carbs..we found 2 was enough to cover the tortilla…
You could also use this sauce on meat..bbq ribs,wings, etc…

Low Carb General Tso Chicken

Yummo General Tso chicken

Needing to come up with a really cleaver way to disguise our chicken for dinner tonight, I searched the internet and found this wonderful recipe for Low Carb General Tso Chicken from Linda via George Stella….. I tweaked it a little for my own liking but the results was amazing.. my son couldn’t believe it was low carb!!! Try this it is amazing!!!
1 1/2 tablespoons soy sauce
1 1/2 tablespoons rice wine vinegar
1 tablespoon sesame oil
1 tablespoon orange zest, I used dried
1 tablespoon fresh ginger, grated
1 tablespoon granular Splenda or equivalent liquid Splenda (see my comments below)
1 clove garlic, minced I used 2
1/4 teaspoon chili paste
1/4 teaspoon pepper

1 1/2 pounds boneless chicken breasts, cut in bite size chunks
2 tablespoons oil
2 tablespoons red bell pepper, diced, 3/4 ounce or about 1/4 of a small pepper

Whisk all of the marinade ingredients in a small bowl and pour into a gallon zipper bag along with the chicken strips. Gently knead the bag to evenly distribute the marinade. Marinate in refrigerator 1 hour. Remove the chicken from the bag, reserving any excess marinade (see my comments below).

Heat the oil in a wok or large skillet over high heat. Cook and stir the chicken 2 minutes until it starts to brown. Add the bell pepper, green onions and marinade. Cook 3-4 minutes, stirring constantly, until the sauce has reduced and the chicken is done. It may not take quite that long.

Makes 4 servings

Asthma..remember you don’t want this.

Today as I was taking my asthma breathing treatment. I snapped a picture.. why you might ask.. because this is a low for me.. I wanted to see myself and what I looked like with that mask on.. I wanted to see where I was.. because I want to remember this moment and I don’t want it anymore..
Lets face it.. my weight could very well be a motivating factor in this asthma thing.. I had never had it before.. is it now something I am going to continue to have to deal with because of the weight.. Well I can tell you right now I don’t want to .. I don’t like it. I have to change it.. this is not the person I am.. I don’t like who I am becoming.. I don’t want to be one of those fat old ladies in a hovaround attached to a breathing machine..going around doing her shopping.. and everyone saying and pointing look at that fat lady .. that’s not who I am.. now let me say I am not knocking those who are in that position and no one knows the reasons why they are where they are today.. Maybe it just couldn’t be helped..and for those I am sorry.. But this is one chick who is going to do everything in her power to not be that person..because that is not where I want to be.. I want to enjoy like not just be.. I want to share in the joys and fun going on around me.. at 56 I want to go on the roller coaster and scream to the top of my lungs..I want to enjoy my Golden years.. not hate them. I am not going to just sit around and wait to die.. that’s not who I am..
Today was the first complete day of my Healthy life style changes.. and it went well.. its hot here and I am still sick with this asthma thing..but I didn’t let it get me down.. I even took Maddie for a bit of a stroll down our street.. even if it wasn’t far.. it was a start.. and tomorrow I will go further. and the next day a little more.. until I make it clear around the block…
My eating was good.. actually I should have ate more. .I’m just not hungry right now.. and I can afford to lose..
But what I did eat was good ..egg for breakfast..a protein drink for lunch…with triple berry blend.. and dinner was a low carb burger..I am going to finish with fresh-cut orange slices.. I forgot how much I love those…so I drank lots of water..and more water and did I mention I drank water today.. no soda..humm. I’m ok with that..
as I continue on this healthy life style change I am trying to learn how whole foods..fiber and the whole fresh foods concept..
which brings me to is costly to eat fresh..
whats up with that..? I went to Wally world today and was shocked at the price of fresh fruits and vegies.. I can by frozen cheaper.. but I don’t want frozen.. or canned.. I want fresh.. I will be making a trip to the farmers market Saturday… pick up the fresh fruit and vegies for the week..and I will plan my menus around what they have..
do you realize that if you don’t put anything “packaged” in your cart at the grocery don’t need to go down 3/4 of the isles…just hit the outside ones..cause everything in the middle is packaged..I never realized that before.. guess I just took it for granted that what was ever on the shelf was good for me.. wrong..
eating clean..eating freash and no packaged is going to be better and healthier for me , no doubt.. but it is also going to take some creative thought on my part to come up with some good recipes…
I am trying to think back to my grandmas cooking.. fresh green beans from the garden cooked slow all day long.. heck I could make a meal out of those! And running to the garden to pick fresh tomatoes , then grandma slicing them up..and serving them..all by themselves…and then there was the trips by bike to Weiants greenhouse to pick up some fresh off the vine cucumbers for supper that my mom would slice and put in vinegaer..yummo! More vegies..that’s what we need..more vegies..I think I would like a green grow vegetables all year long..humm wonder if that is doable here in North Carolina..will have to look that up!
You can change your life style to help you get healthy.. it may not be easy..but its doable…planning is all it takes.. lots of planning.. and weekly and semi weekly shopping.. I want to shop like the Europeans.. almost daily.. picking up fresh ingredients..without perserves in them.. I miss that about England.. farmers had little carts on the yard for you to purchase fresh from their gardens.. on the honor could drive by a farm and free rage eggs would be out by the mail box..for you liking.. and then there was our neighbor who butchered his lamb himself and would sell it to us USDA there!! I ate well in England.. and I didn’t get fat.. we ate very little fast food..( ok we did eat the fish and Chips..but how couldn’t you! ) things were leasiurly..naps taken..walks through beautiful English gardens.. time spent enjoying the beauty of nature..a slower time..a healthier one.. I have memories of time past to draw up on to help me live a healthier life style right here in the here and now.. I just have to lean on those memories more..and less of the ones with me with the breathing mask on my face.. fighting for my next breathe..I am slowing life.. I am simplifying things..that way I may live to enjoy it all…

Life style change

This week has been another challenging one.. It seems these days I am having way too many of there..I don’t like it.. at all.. this asthma things has really got to me this time.. I’ve been through alot this past year , having had my total knee replacement..getting laid off from work..its been tuff.. but as tuff as that has been..asthma is worse.. I hate it..not being able to awful..beyond awful..This asthma thing has been apart of my life regularly for the last five years or usually rears its ugly head in early fall. this year it came earlier.. I don’t like it.. I have been fighting this this since Wednesday.. this chronic Bronchitis seems to follow the asthma..I don’t like my youngest son and my daughter in law called to check on me today. How was I feeling he said..better, but not my best I said.. He said mom you sure have been sick alot lately, I think you need to change your life style..Change my life style, I thought to myself? Really? That would help? First let me say my son is a United States know fit, healthy all that stuff…and my daughter in-law..well she is beautiful,,,from Uzbekistan..she should be a model she is so beautiful & Petite..they both try real hard to exercise and eat healthy. They live in DC and they bike in the park, they walk, run, paddle Kayaks..did I mention eat healthy.. I realized I can learn from these two..

Simple words .. Change your life style.. I think that’s a kind way of saying..hey you need to lose weight and exercise..but I like it.. I like the sound of it.. I am already trying to “change my life style”. by eating differently..and it is helping , But I need to pick it up a notch..or three or four.. So I did what any other respected American would do.. I goggled it..and boy did I get to read some feedback on this topic..

Its no secret I am obese..unfit,,,and unhealthy..I don’t like it.. but its such hard work you know..but I am constantly getting feed back on this from my loved …well I am up to the challenge…

So I am going to start with the 10 ways to change my life style to lead a healthier lifestyle..

1. Cut out the liquid calories, especially soda. This is important. Most calorie laden drinks are high in sugar and not much else. Your fruit juice might have a lot of vitamin C but it probably also lacks fiber and will send your blood sugar for a wild ride. Slowly eliminate sodas, juices, energy drinks, and other calorie filled liquids. They aren’t very satisfying and will only keep you heavier. Replace liquid calories with water, water flavored with ginger/lemon, or herbal tea. A cup or two of green tea per day is nice too but don’t overdo it because it does have caffeine.

2. Eat only whole foods. Throw out the white bread, white rice, white sugar, and refined sugary cereals. Get rid of canned soups and make your own from scratch with wholesome ingredients. For breakfast try a fruit only smoothie with a spoonful of nut butter or some plant based milk. Or you could try a high fiber, whole grain, organic cereal and add flax seeds, berries, and nuts. For lunch and dinner focus on salads with avocados, nuts, and seeds, beans, all sorts of veggies, lentils, organic eggs, and organic meats in small quantities if you so choose. I personally think a whole foods vegan diet is best for long term health and weight loss but not everyone is in the position to adopt that sort of diet yet in there life so If you do eat animal products stick to organic varieties. You can eat whole grains but don’t go overboard on them, especially those containing gluten such as wheat as they can be rather addictive in nature.

3. Don’t think about counting calories. I know this might sound counter to the dieting mentality but the only way you are truly going to make peace with your body is by LISTENING to it. Fixating on calories and number and rigid plans leads you to get so caught up in sticking to the framework that you forget how to listen to your own body. Tomorrow, forget about calories. This isn’t a license to binge because that is just as bad. Asses your hunger. Really listen to it. Think about what your body wants. Eat slowly. Chew thoroughly. Really taste your food. Focus on your satiety signals. When you are no longer hungry, stop eating. Don’t eat until you are stuffed or ill. Eat until you are no longer hungry. It is as simple as that.

4. Infuse your lifestyle with activity. You do not need a rigid gym schedule or expensive membership. You do not need expensive exercise machines, clothing, or other gear. Examine your lifestyle. Do you drive to a lot of places that you could walk to? Start walking. Consider purchasing a bike (used is fine) for errands around town (and for fun as well). Add a quick energizing morning walk or jog to your daily routine. Not because you “have” to but because it will make you feel much better for the rest of the day. What is so painful about that? Spend less time sitting and more time standing. Engage in more physical activities like hiking, gardening, or swimming for fun. Cut your computer and TV time in half. If you replace the extra time with more physical activities you will automatically be burning more calories. Exercise also acts as a natural appetite controller because it regulates insulin levels. It also boosts your metabolism and reduces anxiety and depression.

5. Get enough sleep. This is crucial. If you are getting less than 7 hours of sleep on a regular basis you are compromising your body and your life. It is as simple as that. Your body needs sleep to repair itself properly. Without enough sleep your appetite will be magnified. You will find yourself much hungrier than you would be if you got enough sleep. In addition, your tiredness will make you sluggish and less likely to seek exercise. Try to get at least 8 hours of sleep per night if you really want to lose weight naturally.

6. Start using healthy alternative sweeteners. Ditch the refined sugar and experiment with natural sweeteners that won’t be so harsh to your waistline. To sweeten tea, smoothies, sauces, dips, and dressings, try stevia. Stevia is an all natural calorie free sweetener derived from the stevia leaf. Switch out all of those terribly unhealthy artificial sweeteners as soon as possible. They are nothing but disastrous for your health. Stevia has recently been approved by the FDA so it should be cheaper and easier to find now. Other good alternative sweeteners are xylitol (often found in chewing gum), brown rice syrup, raw agave nectar, fruit juice sweetened fruit spreads, and whole dates. If you really want to make bake goods. Try making a small batch of something you really enjoy just once a week. Experiment with whole grains and alternative sweeteners to make your treat healthier while retaining lots of flavor.

7. Get smart about your fats. Not all fats are bad for you. Not all fats are good for you. You have to learn to distinguish between the good and the bad. The best fats for you are those that are raw and not denatured by heat. Good choices include avocados, soaked and/or sprouted nuts and seeds, extra virgin olive oil, fresh coconuts, coconut milk, raw coconut oil, and raw red palm oil. Don’t eat any refined vegetable oils such a corn oil, soybean oil, cottonseed oil, rapeseed oil, or anything that says hydrogenated or fractionated in front of it. Avoid trans fats like the plague. Even if a label says 0 grams of trans fats per serving, that does not mean that there are no trans fats in it. FDA regulations allow food labels to proclaim no trans fats as long as the amount is under 0.5 grams per serving. However, even a small amount of trans fat is bad for you and if you a variety of things that each have a small amount in them than it will all add up and you might have a significant amount of trans fats in your diet in the end. Good fats are still calorie dense so don’t binge on them. Use them to control your appetite. They are very satisfying.

8. Eat a lot more fiber. Fiber acts like a broom for your body. It keeps you regular and can sweep away cholesterol. Fiber also helps your body store less fat. Fiber also helps you feel full longer. Try to get 40-50 grams a day. The government recommendation of 25 grams is a little too low, in my opinion, for optimal health. Great sources of fiber include leafy greens, flax seeds, chia seeds, all sorts of veggies, fruits, sweet potatoes, beans, lentils, split peas, and tempeh. Don’t over rely on high fiber cereals because they tend to use isolated sources of fiber and can make you gassy and bloated. Fiber is best when it comes in a whole food package the way it is found in nature. In addition, drinking plenty of water will ensure that fiber is able to properly do its job of cleaning out your body.

9. Drink plenty of water. I would recommend drinking anywhere from a half gallon to a gallon of water per day. The more water you drink, the less hungry you will be. You will feel less bloated and cleaner inside. You will retain less water and will look thinner. Your skin will be nicer as well. Water is so necessary for the all the biological processes in your body. You are only doing yourself disservice when you skimp on water. If you are not a huge fan of the taste of water, you might just have to suck it up at first. Trust me, you will get used to it and enjoy it eventually.

10. Relax. Listen. Don’t obsess about dietary dogma. There are a million dietary groups out there trying to throw there diet plan at you as if it is undisputed law. There is no right diet for any one person. The only right diet for you is the on that you discover agrees most with your body. You can discover this by experimenting with different foods and by paying attention to how your body uses them. Never stick to any rigid plan if it is making you ill. Make your own plan and live in tune with yourself. The more in tune you are with yourself the more likely you will be to make healthy choices for your body for life.

Well they all seem doable..don’t they? I think they are.. so tomorrow morning.. I will drag my butt out of bed at a decent a healthy breakfast to give my day a great start..and then its on the gazelle…to do a mile ..OK that may not seem far but it’s a start.I will not have a soda..I will drink water and water and some green tea.. I will learn about fats and whole foods..and whole grain…fiber,I will use stevia..I will infuse my lifestyle with activity….I will get rest..I will unstress my life,I will listen to my body and when it needs to be feed instead of counting those dreaded calories..and the next day I will do it all over.. yea..a healthy life style is my goal…I’ll read and read and google it a million times..until I get it..drilled in my head..

and one of thought of all on my own.. no eating fast food..for now anyway…until I get this Healthy lifestyle thing rockin….time for rest..going to need it to get through my day…

Asthma…i hate it

this post is  unexpected… I had a wonderful end of the week trip planned for New York be on the Good Afternoon America show.. Lara Spencer is making over a Small table I bought at a boot sale in London..several years ago..

So today at this moment I should be laying in a very Posh Hotel room..awaiting morning to arrive when I was to be taken by the ABC studio car to the Good Afternoon America studio where I was to view the reveal of my table..

Instead I am sitting at the computer in my house in North Caolina..recovering from yet another Asthma attack..lucky the show will be rescheduled in two weeks

I hate asthma.. it sneaks up on you at the most inopportune times..of couse I must admit no time is a good time for asthma to sneak up on you..

If you don’t have asthma..thank God…cause it is not a good thing to have..

I still don’t understand it.. its been three years now since I have been diagnosed with it.. at first I was in denial..asthma way…but WAY …believe me I got it..

It’s a dreaded feeling to not be able to get a breath not have control over each breathe.. many people take breathing for granted.. most don’t even have to think about it.. it’s just something you do ..many in and day out..with no thought to it..

to us with asthma..we think about it alot..especially in a middle of an asthma attact…there scary..fighting and anoying..most times you recognize them and a good inhaler or a nebulizer can help ward off a trip to the emergency room. But let me tell you.. don’t be ashamed to go to the ER..if you can’t talk…because you can’t breathe..that’s trouble..with a CAPATIAL T..

I will talk here for a minute about the ER treatment..its a guessing game at best.. and as a veteran of must speak up and tell them what works for you… One breathing treatment may work for some and maybe two for others.. a shot of a steroid can do wonders quickly….after my experience last night in the ER.. I have come to the conclusion..that I will in the future stand my ground on what treatment I want for MY asthma.. I know my body and I know what works.. I have been down this road a time or two..if I want the friking steroid shot.. give it to me… I’m not a drugie..I need it to breathe and stop looking at me like I just asked you to shoot me up with Herrion..I need this to I don’t just want another prescription to get filled tomorrow.. I want relief right now.. And if you give me the damn shot I can feel that relief in 5-10 minutes..which when you can’t breathe seems like hours..

Parents if you have a child with asthma..learn to be there best advocate.. learn what helps them and remember it…the next time you have to take them to the ER..speak up and tell them what you want them to I said earlier they do not know your child..they are actually guessing what would help.. but you, you know what helps..don’t make your child play the guessing game here…tell the doctors what you want them to do..

Now before someone comes in and yells at me for the above statement.. let me just say this.. IF your self or your child have never delt with Asthma are not in any position to tell anyone what you want to do.. at first it is a guessing to what treatment will work for you.. you have to be a very important part of that treatment plan. you have to show your voice from the get go..and be honest with what works and what doesn’t.. it took my Doctor and I months to get my treatment plan where we felt it should be. And keep in mind ..sometimes it will need tweeking…so be active in your own or childs plan..get a note-book at write down meds..times..things you think might trigger the asthma attacks…responds to frequent the asthma attacks are..write it down..and do share it with your doctor..this will help the two of you develop the very best plan of treatment for your asthma..

Next , don’t take asthma likely…every day 9 people die from asthma attacks..over  3300 die each year from asthma attacks that could be avoid..

  • Asthma cannot be cured, but it can be controlled.

so for today..I will be taking it easy..and tomorrow too..asthma takes a lot out of you when your struggling to takes me a few days to get it back together..until the next time it roars its ugly head..which if it never happened again..would be too soon..
